Above St Kilda Beach, Baxter is a coastal dining room built around fire, good produce, and food made for sharing. Start with oysters and raw seafood, move into small plates, then on to bigger things off the charcoal grill. Some dishes are old favourites, done our way; others change with the seasons.

The room shifts through the day: long lunches overlooking the beach, sunset dinners, then cocktails and vinyl once it gets dark.
